Sugar Free Vegan Strawberry Cheesecake





Vegan, Gluten free, Sugar free, SO EASY!

2 containers Tofutti Cream Cheese, softened
2 cups whipped cream (recipe to below)
1 tsp. vanilla
1/4 cup organic stevia (not the stevia extract or one made with maltodextrin, yuck!)
1 (10 oz) jar sugar free or unsweetened organic Strawberry spread

Ahead of time:
1) For making whipped cream, chill can of coconut milk (the cream will rise to the top and can be whipped)
2) Prepare Pie crust by processing together 2 cups raw nuts or seeds with 2 cups dried pitted dates. Knead together, and press into pie plate.

To make vegan whipped cream:
Open the can of coconut milk (open the end that was up while in the fridge)
Scoop out the solid cream.
Add 1 tsp. gluten free vanilla
 Blend until smooth and fluffy, use in variety of recipes!

Now blend together:
whipped cream
2 containers Tofutti Cream Cheese, softened
1/4 cup stevia
1 (10 oz) jar sugar free or unsweetened organic Strawberry spread
pour into pie crust, chill at least an hour before serving. Enjoy!
