Easy Pie Crust

Do you miss the "ready made" graham cracker crust or pre-made frozen pie shell? Here is a very simple gluten free, oil free, vegan pie crust you can whip up in minutes in your food processor!

Ingredients:
2 cups raw nuts or seeds
2 cups pitted dried dates or other dried fruit

Method:
Mix nuts in food processor (with 'S' blade) until the consistency of flour (large pieces of raw nuts can be very unpleasant to bite down on in a pie, be sure to ground well; but do not over process or you will get nut butter!) A few at a time, add dates just until mixture clumps together. Form into a ball by hand. Press into a pie plate, and use your favorite pie filling! Perfect unbaked, or has a nuttier flavor and crispier texture if baked along with your pie filling, or bake it for 10 mins at 400 and cool before filling.

Variations: You can combine most any raw nuts and seeds together for the 2 cups. Likewise, most dried fruit would be suitable, as long as the flavor is one that compliments your filling. Dates and Almonds are the least overpowering and would make a perfect base for anything.

Note: In this photo I have used almonds and dates.
Sunflower, hemp, sesame, or pumpkin seed all work well in place of or combined with nuts. Any nut or seed  you have on hand will work, I have used Almonds, peanuts, cashews, sunflower seeds, and hemp seeds with great results!

This crust is used in my Sugar Free Vegan Strawberry Cheesecake recipe.
