Star Berry Yogurt Parfait



So easy, festive, and deliciously healthy! Consider making this for, or taking this to your holiday party!

Ingredients
1 pint plain or vanilla Soy yogurt (use coconut cream if avoiding soy)
1 cup crushed gluten free graham crackers
1 sliced starfruit*
1/2 cup diced tropical fruit/kiwi, etc.
1/2 cup blackberries, raspberries, strawberries, blueberries, etc.
1/4 cup shredded coconut, toasted
4 martini or margarita glasses

Directions

1. In a martini glass (or other festive glass), spoon a dollop of the yogurt into the base of the glass and then top with a sprinkling of graham crackers, a layer of diced fruit, then a few berries.

2. Start again with the yogurt, continuing the pattern until the glass is filled, placing star fruit slices in the center on top.

3. Sprinkle with 1/4 of the toasted coconut.

4. Repeat with the remaining 3 glasses and serve immediately.

Serves 4

*Tip: look for carambola (star fruit) that is beginning to turn golden yellow with slightly brown edges—unripe green fruit may be sour.
