Chia Seed Pudding
Chia Seeds are called a Super Food for good reason: they are a powerhouse of nutrients – a complete protein full of calcium, magnesium, iron,
fiber, antioxidants, and omega 3 fatty acids.
INGREDIENTS
2 1/2 cups of Almond Milk
1/2 a cup of Chia Seeds
1/4 a cup of Maple Syrup (or according to taste)
1 tsp of vanilla essence
Strawberries or Blueberries (optional)
METHOD
Whisk all ingredients together. Wait 20 min and whisk again (the chia seeds are absorbing the almond milk). Separate into four small pudding bowls and refrigerate for four hours or overnight. Garnish with berries.
This is a great dessert or quite a healthy breakfast – it will give you heaps of energy that will last throughout the day. Many marathon runners depend on a helping of chia seeds soaked in water as part of the routine to keep them energized and hydrated throughout their run!
